A few grilled asparagus, 1 leek, 6 cooked beetroots – and some homemade pesto -
Pesto is my thing – I have a friend who is also a real pesto queen we often share ideas – and inspirations -
this one is rather old school – made with a mix of parsley, basil and coriander – and a a handful of pinenuts, some olive oil and a bit of emmental cheese (only because I found out in the last minute that there was no more parmesan cheese in my fridge.)
Placing this salad together on a bright pink dish – is a joy for the eyes… a small moment of mindful everyday magic…. and it even tastes good….
